Garlicky Kale and Sardines

This is one of the fastest and healthiest dishes to make. It only takes a few ingredients sometimes to make a delicious meal that is packed with nutrition and in this case Omega 3’s, antioxidants, Vitamins K and A, and fiber. This can be a meal unto itself or a side dish with a cup of soup.


1 T. olive oil

2 cloves garlic, minced

2-3 cups Lacinato kale, chopped

1 3.75 oz can sardines, broken apart in a small pieces

¼ tsp. sea salt

ground pepper

Slice of lemon


Heat the olive oil in a medium sauté pan on medium high heat.  Add the garlic and sauté for 30 seconds. Add the kale, sea salt and black pepper, and continue to sauté until it softens and wilts down, about 3-4 minutes. If the kale is dry and sticks to the pan add a little water or broth. Add the sardines and heat through for 1 minute. Squeeze the lemon over the kale and sardines and serve.
